Slabs have the opposite profile, less to go wrong day to day, but harder and more expensive to correct when the soil under them moves.
Not perfectly. A hundred-year-old house that has settled slowly and evenly is doing what old houses do, and chasing a laser-flat floor in one can cause more damage than it fixes. What matters is the rate and pattern of change: a slope that has been stable for decades reads differently from a floor that has dropped half an inch in two years, and the second one is the one worth investigating.
Usually yes. Most of the work happens under the house, and re-levelling is done gradually with small adjustments over a day or more rather than one big lift, specifically so finishes above have time to move with it. Expect noise, expect some hairline cracking in plaster and drywall where the floor comes back up, and expect the crew to need access to the crawl space entry for the duration.
